Asinoneis produced only during best years and the number of bottles depend of the years. The production is around 30.000-45.000 bottles.
Durino the years when this wine is not bottled, it is declassed as Nobile di Montepulciano.
GRAPE
Prugnolo Gentile 80% - Canaiolo nero, Colorino e Merlot 20%. During best years 100% Sangiovese (Prugnolo Gentile)
VINIFICATION
Fermentation in truncated- conic stainless steel vats at controlled temperature with wine-pressing and déchargements. Fermentation and maceration for 20-25 days
REFINEMENT
Asinone is completely refined in barriques and tonneaux for18 months and one part of the malolactic fermentation in kegs. Refinement for at last 8 months after bottlement.
