THE WINE
This wine comes from the best and selected grapes of this farm, which produces Brunello only in limited edition, under the quantity expected by Rules and Regulations.
GRAPE
100% Brunello di Montalcino (Sangiovese group).
VINIFICATION
Soft pressing, fermentation in stainless steel tanks at controlled temperature (28-30 °C) with déchargement and delestages; maceration on grapes’skins for 21-25 days
REFINEMENT
24 in oak barrels of around 60 q.li, then refinement in stainless steel tanks and in bottle for 2 years.
POSSIBILITY OF AGEING
It is a good wine when it is young, but with a long ageing in bottle there is the exaltation of the tannins politeness and the strong aromatic evolution.
MATCHES
It has a stuff and organoleptic elegance that make this wine a good drink with the best mediterranean dishes, such as aromatic and tasty game or ripe cheese.
